Ingredients

* 2 cups walnut halves
* 1/3 cup maple syrup
* 1/8 teaspoon salt

Directions

Preheat a dry skillet over a medium-high heat. Add the walnuts, maple syrup and salt. Cook, stirring frequently, until syrup is caramelized and nuts are toasted, about 3 minutes. Let cool.

Ingredients

* 2 teaspoons canola oil
* 1 small onion, sliced
* 1 clove garlic, minced
* 1 teaspoon minced ginger
* 1 head napa cabbage, cleaned and sliced
* 2 tablespoons soy sauce
* 1 tablespoon rice vinegar
* 2 teaspoons toasted sesame oil

Directions

In a large saute pan over medium-high heat, add the canola oil and heat. Add the onion, garlic and ginger and saute, stirring, for 1 minute. Add the cabbage and cook until just starting to wilt, about 2 minutes. Add the soy sauce and rice vinegar and stir well and cook just until cabbage is wilted, about 3 minutes. Remove from heat and drizzle with the sesame oil.

Ingredients

* 1 tablespoon olive oil
* 3 cloves garlic, chopped
* 2 (8-ounce) boneless, skinless chicken breasts, halved
* 8 ounces baby spinach
* 2 tablespoons balsamic vinegar
* 1/3 cup low-sodium chicken broth
* 1 cup low-sodium canned chopped tomatoes with juice
* 2 cups whole wheat couscous, cooked

Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. Add the tomatoes, bring to a simmer and cook 3 to 5 minutes.

Place the couscous in a serving bowl. Top with the spinach, chicken and balsamic-tomato sauce.

Shane's Meatballs

These are so good and great to take to serve to friends and you go home with a clean pan! I actually take them in a crock pot so you can keep them warm and don't forget the oderv picks. You will love these! : )


Ingredients

* 1 pound cooked and frozen meatballs, thawed
* 2 (8-ounce) cans pineapple chunks, drained, juice reserved
* 1/2 cup Dijon mustard
* 1 diced red or white onion
* 1/2 cup chopped green onion
* 6 cloves chopped garlic


Directions

Sweet and Sour Sauce, recipe follows

* Coarse black pepper

Preheat oven to 350 degrees F.

In deep non-greased baking pan, add the thawed meatballs. Top the meatballs with the pineapple chunks. In a medium bowl add the mustard, red and green onion, and garlic. Mix well. Top the meatballs and pineapple with the mustard sauce. Add the Sweet and Sour Sauce and season with black pepper.

Bake for 30 minutes. Remove from the oven; add the remaining pineapple juice, stir to combine, and place back in the oven for the remaining 30 minutes. Serve while hot.
Sweet and Sour Sauce:

4 cups ketchup

1/4 cup water

2 tablespoons Worcestershire sauce

1 cup sugar

1/4 cup white vinegar

Black pepper (about 2 tablespoons)

2 tablespoons pineapple juice

In a sauce pan, mix all ingredients together. Cook on high heat. Keep your eye on it. Do not walk away. Cook for 2 minutes and stir. After 3 to 4 minutes, take it off the heat and mix for 2 minutes. Use it same day or keep in the refrigerator for about 2 to 3 weeks at the maximum.

A-1 Meatloaf

This is always a favorite and everyone loves it! So easy and not expensive to make.

What You Need
1 can (8 oz.) tomato sauce, divided
2 lb. ground beef
1 onion, chopped, green bell chopped
1 cup fresh bread crumbs
1/3 cup A.1. Original Steak Sauce
2 eggs, beaten
1/2 tsp. ground black pepper
Make It

HEAT oven to 350°F. Reserve 1/2 of tomato sauce; mix all remaining ingredients.

PRESS into 9x5-inch loaf pan.

BAKE 50 min.; pour off fat. Top with reserved sauce; bake 10 min. or until meatloaf is cooked through (160ºF).
